Amyella’s Blueberry Oat Bars

I’ve just been adding blueberries to my basic oat bar recipe – the same base from which all the variations¬† were created.

Amyella’s Blueberry Oat Bars

4 cups of oats
5 cups of eggbeaters
2 cups (1 whole bag) frozen blueberries
1/4 cup Splenda
1 tsp – 1 Tbs cinnamon, to taste (I like a lot)

Preheat oven to 425. Mix all. Pour into a 9 x 13 baking dish sprayed with cooking spray. Cook for 30-35 minutes. Cool, cut into 12 squares. Don’t eat these straight from the oven, they’ll taste “eggy”. Give them a day in the fridge first. Store in fridge.

Makes 12. For each:

1.75 g fat
22 g carb
3 g fiber
15 g protein

Amyellas’s Morning Glory Oat Bars

Morning Glory Oat Bars
(you could also bake these in muffin tins)

2 1/2 c oats
1 c agave nectar, sugar or sugar substitute of your choice
1 Tbs cinnamon
2 tsp baking soda
1/4 tsp salt
1 c grated carrots
1/2 c chopped walnuts
3/4 c raisins
5 c eggwhites
2 tsp vanilla
1 small apple, diced
1/2 c unsweetened organic reduced fat coconut

Mix all. Pour into 9×13 dish sprayed with pam. Bake at 375 for 35-40 minutes. As with all these oat bars, let cool and store in fridge. They don’t taste good warm out of the oven (they taste “eggy”) but taking out of the fridge and eating toasted or at room temperature they’re delicious.

Makes 12 servings and each serving (stats when made with sugar substitute):

5 g fat
25 g carb
14.5 g protein

Amyella’s Pumpkin Oat Bars

Amy’s Pumpkin Oat Bars

2 cups canned pumpkin (not pumpkin pie filling, plain pumpkin)
6 cups rolled oats, dry
5 cups eggwhites
1/2 cup raisins
cinnamon to taste
Pumpkin pie spice to taste
1/4 cup agave nectar, sugar or sugar substitute of your choice

Mix all, pour in 9×13 baking dish sprayed generously with cooking spray. Bake 425 for 40 minutes. Let cool, cut into 12 servings. STORE IN FRIDGE. Eat at room temperature or toasted.

2 zucchini, shredded
6 cups rolled oats, dry
6 cups eggwhites
1/2 cup raisins
cinnamon to taste
1/4 cup agave nectar, sugar or sugar substitute of your choice
