Fried Rice Recipe

Auntie wanted to know how I make my fried rice. I’m a little embarrassed to even post this as a recipe because it’s so basic but it is really tasty and, in my opinion, preferable over the stuff you get in takeout.

Also, Patrick absolutely loves this meal, so double score!

Fried Rice

*1/2 cup cooked brown rice (preferably leftovers that have been in the fridge)
*Cooked, diced meat of choice (I use chicken for Patrick)
*Finely diced, cooked broccoli, carrots, baby corn (could also add peas)
*1 egg
*black pepper
*reduced sodium soy sauce
*chopped scallion tops

Spray a deep skillet pan with cooking spray and add the rice, meat, veggies and crack some black pepper over them. Cook until they’re warmed through and there’s no moisture in the pan. Add the egg and stir constantly until all the ingredients are coated and starting to brown. Add the soy sauce and cook until the liquid cooks off. Serve in a bowl with scallions.

It’s a boring brown dish but really tasty.

Changes I make for myself: I usually leave out the meat, add extra egg white and replace soy sauce with Bragg’s Aminos.
