Flourless, Almost Sugar Free Chocolate Chip Cookies

1 cup cashew butter
1 cup Splenda Granular
1 tsp baking powder
1 tsp vanilla
1/4 cup egg white
1/2 cup chocolate chips (I have found sugar free chocolate chips before, online. If you’re really set on making these completely sugar free you could substitute).

Preheat the oven to 350°.

Cream the cashew butter and splenda in a bowl. Add the vanilla, baking powder and egg. Mix until combined (will be sticky). Fold in chocolate chips.

Roll into 12 balls, place on a cookie sheet. Then slightly press down on each one to flatten just a little bit.

Bake about ten minutes and let set for a few minutes before taking them off the cookie sheet (or else they’ll just fall apart).

Makes 12, each cookie:

170 cals
13 g fat
13 g carb
5 g protein

    They’re really fucking delicious!

    Probably still best left for a free/cheat day though, unless you are incredibly disciplined. Gotta be careful with portion control with these (and the flourless SF PB cookies too). Only 1 cookie is a whole serving, and it’s a hefty cal and fat count. It’s basically 1 serving of a nut butter, so it’s all healthy fat, but you could easily blow your daily calories on these but suddenly realizing you ate half the batch in about 3 minutes (which would be a half cup of cashew butter!!) Ooops!

    Uh…not that I would know anything about that. 😉

    ONE cookie!!! ONE!!! There’s no way a sane person could eat just ONE cookie. Definitely something to be saved for free day!
